The lettuce shines with a pearlescence. It is the iridescence of a hummingbird’s plumage or the inside of an oyster shell. Certainly, lettuce should be vibrant and bright, all the green spectrum found in a 96 count box of Crayola crayons but the shimmer is what has surprised me. The lettuces look like precious jewels and – of course- they are. Spectacular bundles or beautiful nutrient-filled food just waiting for your table.
